Job Description

Ithaki Estiatorio is a new upscale Hellenic restaurant opening in Chicago’s Greektown in Summer 2025. The space will feature a contemporary main floor with a full bar and a subterranean cocktail lounge inspired by island nightlife and Mediterranean elegance.

We are seeking talented and passionate Bartenders to join our opening team. This is an exciting opportunity to contribute to the launch of a vibrant, experience-driven concept that brings modern Greek culture to life through food, wine, and spirits.

Candidates should have 2–3 years of experience in an upscale or fine-dining cocktail bar environment and bring a genuine passion for hospitality. Intellectual curiosity, creativity, and pride in your craft are essential traits for success in this role. You’ll work alongside a dedicated team to position Ithaki as a premier destination for modern Hellenic dining and elevated beverage experiences.

Essential Responsibilities:

Effective verbal communication skills

Punctuality and reliability

Participating in all FOH training programs and meeting training expectations

Providing an exceptional service experience rooted in hospitality and guest connection

Guiding guests with informed suggestions on cocktails and wine

Setting up, stocking, and maintaining the bar to standard

Preparing juices, garnishes, infusions, and other cocktail components

Executing cocktails with consistency according to established recipes

Contributing creatively to the evolving cocktail program

Ensuring responsible alcohol service

Adhering to proper cash handling procedures

Executing all opening, closing, and running checklists

Developing and maintaining proficiency in Toast POS

Maintaining deep knowledge of all food and beverage offerings

Demonstrating a team mentality while completing tasks independently
